Ingredients

  • 2 cups uncooked gluten-free old-fashioned rolled oats
  • 1 cup crisp rice cereal
  • 1/2 cup vanilla protein powder
  • 1/3 cup flax meal
  • pinch of salt
  • 1 cup natural peanut butter
  • 1/3 cup honey
  • 2 tablespoon virgin coconut oil, melted
  • 1 teaspoon pure vanilla extract

Instructions

    In a large mixing bowl, combine all ingredients and mix thoroughly until the texture comes together. If the mixture seems dry, add a splash of milk or water; if too wet, add more dry ingredients.

    Line a baking pan with parchment paper (for bars) or form 1-inch balls (for bites/balls).

    Press the mixture firmly into the pan, or roll the balls evenly between your palms.
