Ingredients

  • 2 cups almond flour
  • 1/3 cup monk fruit
  • 1/4 teaspoon salt
  • 4 tablespoons Greek yogurt (plain)
  • 1 teaspoon vanilla extract
  • 30 g protein powder (vanilla or your choice of flavor)
  • 1 1/2 teaspoons baking powder
  • 4 tablespoons coconut oil
  • 2 large eggs

Instructions

    Preheat the oven to 350°F (175°C) and prepare your pan or baking sheet with parchment or non-stick spray.

    In a large bowl, combine all wet ingredients (eggs, oil, sweetener, vanilla, etc.) and whisk until smooth.

    Add all dry ingredients (protein powder, flour, cocoa, baking agents) and mix until just combined. Do not overmix.

    Fold in any add-ins (chocolate chips, nuts, fruit) and transfer the batter to the prepared pan.

    Bake for 18 to 25 minutes (cookies and muffins on the shorter side, brownies/bars longer), or until a toothpick inserted in the center comes out with moist crumbs.
