Ingredients
- 3 pounds Brussels sprouts, trimmed and halved
- 1/4 cup olive oil
- 8 garlic cloves, minced
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 package (5.3 oz) fresh goat cheese, crumbled

Bring a large pot of salted water to a boil. Add the main vegetable (cauliflower florets, beans, or sprouts) and cook until just fork-tender, about 5 to 10 minutes depending on the vegetable.

Drain thoroughly and return to the pot, or transfer to a serving bowl if using a sauce-based finish.

Heat olive oil or butter in a skillet over medium heat. Add any aromatics (garlic, shallots) and sauté for 1 to 2 minutes until fragrant.

Toss the cooked vegetables in the skillet with the aromatics and any remaining ingredients (cheese, honey, vinegar, herbs). Season with salt and pepper to taste.

For mashed sides: combine the cooked vegetable with butter, milk, and seasonings in a food processor or with a hand masher until creamy.
