- 2 cloves garlic
- 1 lb ground chicken
- ¼ cup white wine
- 8 oz protein rigatoni
- ½ pint grape tomatoes
- 1 cup tomato puree
- 1 cup heavy cream (can substitute for 1/2 cup non-fat Greek yogurt and 1/2 cup milk)
- 4 oz baby kale
- ½ oz grated parmesan cheese
Instructions
- 1
Bring a large pot of salted water to a boil. Cook the pasta according to package directions until al dente. Reserve 1 cup of pasta water before draining.

While the pasta cooks, heat olive oil in a large skillet over medium heat. Add any aromatics (garlic, onion) and cook until fragrant, about 2 minutes.

Add the protein component (chicken, sausage) to the skillet and cook through, breaking up or browning as needed.
- 4
Stir in the sauce ingredients (cream, broth, tomato, herbs) and let simmer for 5 minutes until slightly thickened.
- 5
Toss the drained pasta into the sauce, adding reserved pasta water as needed to reach your desired consistency.
- 6
Serve immediately, topped with fresh herbs or grated cheese.
