Ingredients
2 cups almond flour
1/3 cup monk fruit
1/4 teaspoon salt
4 tablespoons Greek yogurt (plain)
1 teaspoon vanilla extract
30 g protein powder (vanilla or your choice of flavor)
1 1/2 teaspoons baking powder
4 tablespoons coconut oil
2 large eggs
Frosting
4 ounces cream cheese
1/4 teaspoon vanilla extract
monk fruit (if needed)
15 g protein powder (vanilla)
2 teaspoons almond milk (unsweetened)
OPTIONAL: sprinkles
Steps:
Preheat oven to 325 degrees and line a square baking dish with parchment paper.
Whisk together the almond flour, protein powder, monk fruit, baking powder, and salt.
Add in eggs, coconut oil, Greek yogurt & vanilla extract. Mix until smooth (it will be a thick batter).
Spread the batter evenly in baking dish. Bake 20 to 25 minutes. Center should be puffed up and edges should be golden. Cool completely.
In the meantime, make frosting. In a small bowl, combine cream cheese, protein powder, vanilla extract, and few tsp of almond milk as needed until you reach your desired consistency. (optional: add a sprinkle of monk fruit if you want it sweeter)
Spread frosting over cooled cookie bars. Slice into 16 squares.
