Brussel Sprouts with Garlic & Goat Cheese

Roasted until golden and caramelized, the sprouts get tossed with warm garlic and topped with creamy, tangy goat cheese that melts into every bite. It’s simple, elegant, and a total flavor glow-up for a classic veggie. Even the Brussels skeptics will come back for seconds!

Ingredients
  • 3 pounds Brussels sprouts, trimmed and halved
  • 1/4 cup olive oil
  • 8 garlic cloves, minced
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 package (5.3 oz) fresh goat cheese, crumbled

  • Roasting Pan

Steps

  1. Preheat oven to 425 degrees.
  2. Toss first five ingredients in a bowl, then spread in a greased roasting pan. Roast until tender, about 20-25 minutes, stirring occasionally. 
  3. Transfer to a bowl; toss with goat cheese.
  4. Serve and Enjoy!
